Delicious Lean Chicken Curry
Healthy and tasty…..
Its that time of the year again, when we will all be thinking about our Summer wardrobes and with the warmer Spring days only just around the corner, our health also comes into view _ our body shape _ figures _being the main focus as we de-robe a few of those Winter jumpers!!
So with that thought in mind I would like to share one of my favorite lean recipes which I serve up at least once a week to my family and anyone who knows me well, will tell you nutrition is paramount in my life for health and fitness and giving your body the correct fuel it needs to work at a optimum……. So no fear then that this recipe is nutritious and not forgetting amazingly tasty.
This was a recipe that I first found from Joe Wicks Lean 15 new book, however I have modified it slightly but do take a look at his ideas etc, he’s inspirational when it comes to health and fitness and spot on with his work. This is a link to his website >>>https://www.thebodycoach.com/
Lets get started……
- 350g of chopped chicken breast
- olive oil
- Coriander leaves (optional)
- Chilli flakes ( optional)
- chopped finely a red chilli pepper
- tin of chopped tomatoes with chilli
- packet of pre cooked lentils
- one red onion chopped
- two garlic cloves chopped or tea spoon of lazy garlic in a jar
- one large courgette chopped
- four medium sized chestnut mushrooms chopped
- Half a cup of water
- one tablespoon Pataks curry paste (balti being my favourite)
Prepare all the vegetables, finely chopping the onion and red pepper and garlic, whereas making the courgette and mushrooms fairly chunky.
In a large saucepan heat a tablespoon of olive oil and then saute the garlic, chilli and onion until soft. Add the chunky vegetables and chopped chicken until all soft and the chicken has all changed colour.
Add the chopped tomatoes with chilli stir well, meanwhile put the cooked lentils in the microwave for two minutes as per instructions and then stir into the pan the large heaped tablespoon of curry paste. Add the water and lentils and stir, taste for spice choice and then if necessary add a sprinkle of chilli flakes.
Leave to simmer on a medium heat for 20 minutes stirring occasionally.
Serve with jasmine rice and naan bread and sprinkle curry with fresh coriander leaves for garnish _ Delicious.………
